There was nothing dishonest about my quote, Lee, and I rather resent the
implied accusation.
As I just finished writing to Damien Sullivan, I picked turkey breast from
fryer-roasters because fryer-roasters are the most tender and most
flavorable kind of turkey, and because the breast portion is typically the
body-part that most people prefer not only for dinner but also for lunch in
between two slices of (ahem) bread.
A lot of people are averse to the "dark" meat from poultry and a lot of
other people are averse to eating the skin. But few carnivorous homo sapiens
object to the juicy and tasty skinless breast of a fryer-roaster.
