When assembling statistics for nutrition, the most honest,
meaningful measure is always percentage-of-calories. Percentage
of mass, with or without water, isn't important, and only serves
to make a more impressive number without increasing enlightenment.
Lean turkey has about 80% calories from protein; that's the
appropriate number to quote. Soybeans approach 50%.
