    I'm probably as or more addicted to carbohydrates than he was.
    Over the last year I'd switched to "Lean Cuisine" microwaved
    meals instead of the batches of pasta I used to prepare
    (at least then I could "count" the calories because they
    are on the packages). But many (though not all) of the Lean
    Cuisine meals tend to be high on the carbohydrate level
    (carbohydrates tend to be inexpensive so it make the meals
    cheap).

    But I'm moving in the general direction of something Atkins-like
    with omlets. I am no cook (really hate wasting time in the
    kitchen when I could be doing something more productive).
    Thats why pasta was the preparation of choice -- very simple
    and very fast. But given a good non-stick frying pan I'm
    learning that I can do omlets almost as fast (perhaps 10-15
    min. vs. 5-10 min. for pasta). One can vary these from
    spicy (cheese and pepper) to vegy (red and yellow peppers)
    to things I haven't tried yet (spinach, asparagus, etc).

    We probably have 40+ years of "health perspective" that
    "eggs" are bad for you (due to cholesterol content).
    I'm slowly changing my mind -- weight and glucose levels
    (contributing to diabetes) may be what is bad for us.
    Its actually "oxidized cholesterol" that may be what is
    really bad and I can control that by consuming more
    Vitamin E or perhaps Vitamin C, or drugs that lower
    cholesterol level (of which there are a number available).

    So rethinking diet is not a bad thing.
