I did some PubMedding on saturated fats, and the consensus of the reviews is
that monounsaturated fats, polyunsaturated fats, and omega-3 fats, are good,
while saturated fats and hydrogenated oils are bad.
However, the following article: Salmeron, J., F.B. Hu, J.E. Manson et al.
2001. Dietary fat intake and risk of type 2 diabetes in women. Am. J. Clin.
Nutr. 73: 1019-1026, showed no evidence for saturated fat involvement in DM.
also: Yu S, Derr J, Etherton TD, Kris-Etherton P. Plasma
cholesterol-predictive equations demonstrate that stearic acid is neutral
and monounsaturated fatty acids are hypocholesterolemic. Am J Clin Nutr.
1995;61:1129-1139, indicate that not all saturated fats are bad
It is probably a good idea to limit the intake of saturated fat for the time
being, but the evidence is not as compelling as with hydrogenated oils.
BTW, the main saturated fat in cocoa is stearic acid.
