    Strangely, you almost answer your own question. Modern meat is bad for you.
    Even you don't advocate going to the corner grocery store and buying their
    meat. In that sense, you avoid modern meat as much as any vegetarian. All
    of your dietary reasons for this are probably the same for any vegetarian:
    Avoid bad meat and replace it with healthier sources of protein.

    You choose to do this with specialized healthy meat via mail order.
    Vegetarians have chosen to do this with locally available protein sources.
    I don't see much difference between these choices, or why one side should
    defend their food choices to another side. As long as people are getting
    the right nutrients and avoiding the wrong substances, I see no reason why
    they can't choose whatever foods interests them best.
