With respect to agriculture we must rely on archeological evidence and
carbon-dating, etc. I seem to recall that the first evidence of seed
grinding (flour making) was discovered somewhere near Israel and dates back
something like 11 to 12 thousand years.
Prior to that technological advance, everyone was a hunter/gatherer.
