    A twelfth-century German bishop, Johann Deuc (sometimes Defuk)
    on his way to Rome - it was the year 1111 and Henry V and his
    courtiers were going to Rome, to get the crown from the Pope;
    I mean the famous crown of the Roman Empire - sent his servant
    Martino ahead, along the road to Rome, to identify places where
    wines (yes, wines) were particularly good.

    When the servant found one of these places, he had to identify
    it by writing, with a piece of chalk, the word "est" ("it is")
    on its wall.

    The servant found a (white) wine at a tavern, in Montefiascone,
    north of Rome, around the lake of Bolsena. It was so fantastic that
    he enscribed an enthusiastic "est! est!! est!!!" on the wall.

    The bishop Deuc (there he was called Defuk) never left the town
    of Montefiascone. Where you can still drink that famous white, dry,
    strong wine, named "est-est-est", a mixture of trebbiano and malvasia
    grapes.
