Well, one thing I've seen is that there are different kinds of saturated fats.
In particular stearic acid, a fatty acid common in beeffat and most of what
cocoa butter is, is supposed to be neutral with regard to blood cholesterol
levels. Whereas butterfat is said to be tres bad.
