You might want to check out "Protien Power" by Michael R. Eades, M.D. and
Mary Dan Eades, M.D.  "Why too many carbohydrates in your diet stimulate
your insulin production, which actually makes your body store fat." There's
some info in there about improving your total cholesterol/HDL ratio with
diet. The jury is still out, but I lost fat, lowered my triglycerides by 200
points, lowered my total C, lowered my LDL, raised my HDL (slightly), with
the low carb diet described in the book. See also "The Zone" by Barry Sears.
